Weekly Menu, 8/8-8/12/11

Monday
AM:  pineapple
Lunch:  pasta w/ lentil sauce (brown rice pasta, lentils, organic marinara sauce), Parmesan cheese
PM:  snack mix:  sunflower seeds, organic raisins, dark chocolate chips

Tuesday
AM:  organic apples w/ honey/lemon/cashew dip
Lunch:  BLT sandwich on toast (whole grain bread, nitrite/nitrate free turkey bacon, lettuce, tomato, mayonnaise), fruit salad (watermelon, cantaloupe, strawberries)
PM:  rice cakes w/ organic peanut butter and strawberry jam

Wednesday
AM: bananas
Lunch:  roasted pastured chicken w/ organic quinoa and mixed vegetables
PM:  corn tortilla chips, bean dip (pinto beans)

Thursday
AM:  organic oatmeal w/ brown sugar and cinnamon and organic milk
Lunch:  black bean enchilada casserole (black beans, brown rice, corn tortillas, homemade gluten-free enchilada sauce, Colby Jack cheese), organic baby spinach salad w/ homemade vinaigrette
PM:  organic popcorn w/ butter, peanuts

Friday
AM:  dry rice cereal squares
Lunch:  scrambled eggs, bagels w/ cream cheese, applesauce
PM:  organic baby carrots, hummus
