Tomatillo Chicken--You've Gotta Make This!!

My husband made a new chicken recipe tonight after seeing it on PBS a couple of days ago. It was superb! The sauce is a little spicy for children, so you could keep their portion of chicken plain or omit jalapenos in a portion of the sauce. Next time, we agreed we'll serve "tomatillo chicken" after this beautiful salad!http://dosflamingavocadoes.blogspot.com/2009/09/try-this-salad.html

A Tale of Two Sisters . . .

One of my daughters likes egg salad, one prefers hard-boiled eggs. . .this was their lunch today.


Hard-boiled eggs (peeled), organic crackers, salt/pepper, organic baby carrots, blackberries, and in the waxed sandwich bag, a couple of ginger snaps.

Add a lid to the container, top the egg side of the container with a cold pack, add a dinner napkin and a fork and knife . . .

Same lunch, but with egg salad instead. The egg salad gets a lid, then the larger container has a lid, too.

Today we spent a lot of time outside--it was just too beautiful and too warm to resist. With several teachers out today, we skipped baking bread. Hey, we can't do it all! Anyway, enjoy the pictures of our beautiful students. We're too tired for words . . .
